Amity’s Cheeseburger Pie (bakes in a pie plate)
1lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick® mix
1 cup milk
2 eggs
1.Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
2.In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.
3.In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.
4.For freezing: Cover with foil and freeze on a cookie sheet. Thaw overnight before baking. Bake about 35 minutes at 350 or until knife inserted in center comes out clean.
CASSIE’S VERSION (bakes in a 9×13 pan)

1 lb. ground beef
1/2 onion diced
1 tsp. salt
1/2 tsp. garlic powder
2 c. Shredded cheddar cheese
1 c. homemade bisquick mix
2 c. water
4 eggs
Cook ground beef with diced onion until no longer pink. Drain grease. Add garlic poweder and salt. Pour into a quart sized Ziploc. In a bowl mix cheese, bisquick mix, water and eggs. Stir well then pour into a gallon sized ziploc bag. Freeze. To prepare, thaw overnight. Layer meat in a greased pie pan. Pour thawed bisquick mixture over the top. Bake at 350 degrees for 25-30 minutes. My husband likes to place ketchup on top to make it taste more like a cheeseburger.
