  • 1 teaspoon kosher salt
  • 1/8 teaspoon black pepper


  1. Over medium heat, heat the oil in a heavy skillet.
  2. Add onions and celery; sauté until softened, about 6 minutes.
  3. Add garlic and cook for another minute.
  4. Pour in tomatoes and heat through.
  5. Stir often for 30 minutes, then lower the heat to medium-low.
  6. Add vinegar, basil, oregano, salt, and pepper.
  7. Cook another 30 minutes, often stirring, until slightly thickened.
  8. Serve warm or chilled. Yield: 8 servings.
